Hasselback Style Sweet Potatoes

Enjoy your sweet potatoes with this Hasselback style method

Ingredients

  • Sweet Potatoes- 4 scrubbed or skinned. I like to scrub my potatoes for recipes such as this one.
  • Butter- 8 tablespoons melted. Can top with additional butter after baking. Also can use olive oil instead (about 1-2 tablespoons per potato).
  • Garlic- 2 cloves minced.
  • Seasonings- as desired.
  • Optional- whatever you plan on putting inside of your cuts. However you do not have to put anything in them. Ideas would include sugar alternative, marshmallows, or even my low carb spinach and artichoke dip.

Instructions

  • Preheat your oven to 400. Prep a baking pan with aluminum foil or similar method.
  • Start by slicing your potatoes into horizontal cuts. Do not cut all of the way through the potato. Make these cuts ⅛- ⅙ apart.
  • Distribute the melted butter or oil over the potatoes and into the cuts. Using a brush can help do this efficiently.
  • Season as desired. If placing something into the cuts you can do this now or halfway through baking depending on the burn/melt temperature of what you are using. Some folks simply place herbs such as thyme between the slices before placing the potatoes into the oven.
  • Roast the potatoes for 55-60 minutes or until they seem soft in the center. Remove from the oven and add any additional butter, seasonings, sauces, or even syrup before serving.
  • Tip: If the tops of of the potatoes seem to be browning too fast, lightly cover them with additional foil mid way though baking.
