Preheat oven to 325. Prep a cake pan well for nonstick
Mix together baking soda, baking powder, flour, cinnamon and salt.
In a mixing bowl, beat together the eggs, oil, and sugar alternatives
Add the dry ingredient from the first bowl to the mixing bowl.
Next, stir in the vanilla extract and the carrots by hand. Then fold in the chopped nuts.
Bake for 45-50 minutes or until a toothpick comes out clean.
