Sugar Free Strawberry Muffins

Ingredients

For the optional glaze, combine together sugar free powdered sugar (1 ¼ c), milk (1 ½ tbsp), SF strawberry jam (1 tbsp), and vanilla extract (¼ tsp).

    Instructions

    • Preheat your oven to 350 and prep your muffin pans for nonstick. Muffin/cupcake liners work well in this recipe.
    • Place the strawberries in a bowl and sprinkle the sugar alternative on top.
    • In a large mixing bowl, sift or use a whisk to mix together the flour, baking powder, baking soda, and the ground cinnamon.
    • To add the wet ingredients from the medium bowl to the dry ingredients in the mixing bowl, first make a well and then pour the wet ingredients into the well.
    • Mix the ingredients in the mixing bowl until just combined.
    • Use a spatula to gently fold the strawberries with sugar alternative into the muffin batter.
    • Bake these muffins for 25-30 minutes or until the tops begin to brown.
