Low Carb Gluten Free Buns

  • Start by preheating your oven to 375 and prepping a baking sheet for nonstick.

  • Whisk or sift together the almond flour and the baking powder. A whisk will probably work better than your average sifter because almond flour granules can be a bit large in comparison to AP flour. Set this aside.

  • In a microwave safe bowl , melt together the mozzarella and cream cheeses. I suggest microwaving at 15 second intervals and stirring between each until melted together.

  • In a larger mixing bowl, mix together the eggs and the flour mixture from the first bowl. Next, stir in the microwaved ingredients into the large mixing bowl with the other ingredients.

  • You will need to form your dough into individual sized balls. You will be able to make between six and eight. If the dough seems sticky, try oiling up your hands a bit to make it easier to handle. Then place each of the balls on to your prepped baking sheet and flatten.

  • Lastly, brush the buns with your butter and season with the toppings of choice. Bake for 12-15 minutes or until they begin to turn golden.

Recipe Notes

Nutritional values will depend upon the ingredients that you use and are only estimates.
Only substitute almond flour with a flour that is 1:1 in volume with almond flour. Generally speaking, most coconut flour is not 1:1 with almond flour. However, Carbalose Flour is low carb and can be used in this recipe.
As mentioned, you will need a low carb flour for this. Almond flour is a the low carb flour of choice in this recipe. It is also a gluten free flour. Look for a blanched almond flour for best results.
 
You can also top your bun with seeds to make it look and taste more like a real bun!
