Sugar Free Homemade Zucchini Bread

  • Preheat your oven to 325 and prep a loaf pan well for nonstick.
  • Grate your zucchini using the method of your choice. Then place the zucchini of a clean kitchen towel or stack of paper towels to drain the excess water while you work.
  • In a medium mixing bowl, use a whisk to combine the flour, ground cinnamon, baking powder, baking soda, and salt.
  • Next, in a large mixing bowl, use a clean whisk to combine together the sugar alternative, oil, eggs, and vanilla extract.
    Once they ingredients have been combined you can use a rubber spatula to fold in the grated zucchini.
  • Add the dry ingredients from the first mixing bowl to the large mixing bowl with the wet ingredients and mix until just combined. Then fold in the chopped nuts.
  • Bake this bread in the center of your oven for 50-55 minutes or until the bread begins to turn brown and a toothpick comes out clean.
    Lastly, allow the bread to cool in the pan for at ten minutes before transferring to a wire rack to fully cool.
