Sugar Free Mexican Wedding Cookies

  • Start by outfitting your mixer with a paddle attachment and beating the butter for a minute to soften up. Then add the granular sugar alternative and a half cup of the powdered sugar alternative to bowl and beat until creamy.
  • Scrape down the sides of your mixing bowl and then stir in the vanilla extract.
  • Add the flour to the mixing bowl and mix until just combined. Then fold in the chopped nuts.
  • Cover the cookie dough and refrigerate for about an hour to get firm.
  • When you are ready to bake the cookies, preheat your oven to 325 and prep your rimmed baking sheet(s) with parchment paper or with a baking mat.
  • Use a cookie scoop to scoop out the dough, shape the cookies as desired and place the cookies on to your baking sheet about two inches apart.
    Bake the cookies for 18 to 20 minutes or until the bottom sides of the cookies begin to brown.
  • Remove the cookies from the oven and let them sit for about ten minutes on the baking sheets.
    Meanwhile, place the remaining sugar free powdered sugar into a shallow bowl.
  • Once the cookies are cool enough to touch, roll them in the powdered sugar alternative to coat them and then place the cookies on to a wire cooling rack to finish cooling. This step can be repeated if needed.
