Sugar Free Vegan Chocolate Bites

Ingredients

  • 1 cup Coconut Flakes
  • 1 cup Almond Meal
  • 2 tbsp Unsweetened Cocoa Powder
  • ½ cup Almond Butter - sugar free preferred
  • ½ cup Maple Syrup - see post for alternatives
  • 1 tbsp Chia Seeds -activated, see post for alternatives

Instructions

  • Prepare a cookie or baking sheet with parchment paper .

  • In a medium mixing bowl, use a fork or whisk to mix together the coconut, almond meal and the cocoa powder.

  • Next, in another bowl, blend together the almond butter, syrup, and chia seeds until blended. Stir the ingredients from the first bowl (coconut, almond meal, and cocoa powder) into the ingredients in the second bowl (almond butter, syrup and chia)

  • Using a scoop or tablespoon, scoop mixture from the bowl and then shape the mix into balls- about 1- 1 ½″. Then roll the balls in the remaining coconut and place on the prepared baking sheet. Cover and return this to the refrigerator or freeze to firm up. Store these balls individually wrapped or covered well with wax paper or parchment paper separating the layers if layered.

I mentioned that this recipe calls for almond butter which you can make yourself or you can purchase your own almond butter . Also mentioned is that this recipe calls for almond meal (not almond flour) that make for a great texture.
Also mentioned above were alternative ingredients that you can add to this recipe.
This would include adding chopped nuts for a great crunch! Or, you could add an extract such as rum extract or mint extract for additional flavor.
