  • Preheat your oven to 350 and prep your cookie sheets for nonstick such as with Parchment Paper .

  • n a medium mixing bowl use a whisk or a fork to mix together the flour and the baking soda. Next, in a large mixing bowl, beat together the butter with the sugar alternative. Then beat in the egg. Stir in the flour mixture from the first bowl to the large mixing bowl as well as the vanilla extract.

  • Lastly, fold in the cranberries and the white chocolate chips.

  • Bake for 10 to 12 minutes or until the edges begin to brown. The cookies will be most likely still soft in the center. Allow the cookies to cool for few minutes on the cookie sheets before removing them to cool on a rack.

As mentioned, you can find sugar free white chocolate chips online since these are relatively new and may be hard to find locally. Optionally, you can try using a chopped white chocolate baking bar that has no added sugar in it.
Also mentioned that this recipe can be made low in carbohydrates.
Simply omit the dried fruit or use less of it. Use a low carb all purpose flour such as carbalose.
