Sugar Free Low Carb Valentines Day Cookies

  • Preheat your oven to 350 and prep rimmed baking sheets or cookie sheets for nonstick. I use parchment paper for a recipe such as this one.

  • In a medium mixing bowl, use a whisk or a fork to mix together the Carbquick baking mix with the unsweetened cocoa powder.

  • Next, in a large mixing bowl beat together the butter with the sugar alternative until creamy. Then add the egg and the vanilla extract and mix.

  • For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. Then add the food coloring to the bowl and mix until blended. Then fold in the sugar free white chocolate chips.

  • Roll out the cookie dough and cut into shapes. Place the cookies 1 ½ to 2" apart on the prepared sheet and bake for 12-15 minutes or until the edges of the cookies begin to brown. Press the remaining white chocolate chips into the cookies and transfer the cookies to a cookie rack to cool before serving.

Recipe Notes

I mentioned that this recipe has been formulated using the low carb baking mix Carbquik. Carbquick already has other ingredients such as a leavener. If you use another low carb baking mix, please check the ingredients that are in that baking mix.
Also mentioned, this recipe has been formulated using Pyure Stevia Blend which has 2:1 ratio with sugar.
If you decide to substitute another sugar alternative, use one that also measures 2:1 with sugar. That is, one cup of the sugar alternative as measured is equivalent to two cups of sugar.
