Instructions

  • Preheat your oven to 350 and prep a square baking pan for nonstick. I like using parchment paper that overhangs the sides of the baking pan. Also, melt the coconut oil and allow it to cool.

  • In a mixing bowl, use a whisk to mix together the unsweetened cocoa with the baking soda. Then add half of the melted coconut oil along with the boiling water. Carefully mix this until just blended. Then add the remaining oil along with the sugar alternative and eggs, mixing until just blended.
    Whisk Ingredients
  • Next, fold in the almond flour with the vanilla extract and salt. You can also fold in any optional ingredients. Transfer to the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow these to cool before cutting and serving

Recipe Notes

I mentioned that this recipe for keto brownies is made with almond flour. Make sure that you are using a blanched almond flour rather than almond meal for best results and texture.
Also mentioned, was that the batter used in these brownies should not be overmixed.
For best results, mix the batter by hand using a whisk. Also, simply mix until just blended as introducing additional air can alter the fudgy consistency of these brownie's.
