Prepare the optional sauce and set it aside while you work. Preheat the oven to 425 and prep a baking sheet with parchment paper. If you are not using a baking sheet, simply set out a large sheet of parchment paper to prepare the pizza on. This is a good recipe to bake on a lower rack in the oven so that the crust can evenly bake.
In a medium microwave safe bowl, microwave the mozzarella cheese and the cream cheese for 90 seconds (or until melted), stopping every 30 seconds to stir. When the ingredients have melted remove the bowl from the microwave and allow the ingredients to cool for a few minutes.
Next, stir in the eggs and the flour. When you are able to, use your hands to to help mix the dough. This dough is not like a normal dough to work with as it has a wetter consistency. I have a couple of tips shared above that can help if needed. Allow the dough to sit for a few minutes so that the cheese absorbs the coconut flour.
Next, transfer the dough to the prepped baking sheet or parchment paper. Using a spoon, spread the mixture out into a round or rectangle shape until it’s about ¼” thick. Use a fork to poke holes into the dough to allow for the dough to rise properly during the baking process (we are not using a leavener). Bake the pizza crust for 8-10 minutes, until golden brown.
Remove the crust from the oven and top with the optional sauce, additional cheese, and other desired toppings. Return the pizza to the oven and bake for an additional 6-8 minutes until the cheese is melted. Allow to set for a few minutes then slice and serve.
