Sugar Free Chocolate Truffles (keto, low carb )

Sugar Free Chocolate Truffles is an easy and delicious chocolaty snack or dessert recipe that is sugar free, keto, and low carb.

  • In a microwave safe bowl, heat the heavy whipping cream until it just begins to bubble (about a minute or two depending on your microwave).
  • Place the chocolate chips on top of the heavy whipping cream and allow them to sit in order to soften from the heat. The chocolate chips will take a few minutes to soften. When the chocolate chips begin to melt you can gently stir them to help combine them with the whipping cream. Then stir in the vanilla extract.
  • Refrigerate the mixture for at least 30 minutes to allow it to thicken. Meanwhile, line a baking sheet with parchment or wax paper. Also, place the cocoa powder in a shallow bowl.
  • Use a scoop or a spoon to scoop out individual truffles. Working with one at a time, scoop the truffle, roll it into a ball, and then dip it into the cocoa powder. Then place the truffle on to the baking sheet and repeat. You can use a fork to hold on to the truffle for dipping and then another fork or spoon to help guide and cover the truffle with the cocoa powder. Another option is to roll the truffle around in the cocoa powder.
  • Store the truffles in an airtight container in the refrigerator. They should keep for about a week. Alternatively, you could also try freezing them.

Recipe Notes

I mentioned that rolling truffles into balls is the most challenging part of this recipe. I suggest dampening your hands with water and having paper towels nearby. The water will help the truffle form into a ball and the paper towel will be handy for quick clean ups.
You can also personalize your truffles.
Make your truffles more interesting by adding some chopped nuts to the unsweetened cocoa powder topping. Or, you could drizzle melted chocolate on top. Using sugar free white chocolate chips instead of the chocolate ones or as a drizzle on top is another option.
