Sugar Free Magnolia Style Cupcakes
Sugar Free Magnolia Style Cupcakes is a delicious SATC inspired copycat cupcake recipe snack or dessert made without added sugar.
Preheat the oven to 300 and prep a muffin tin for nonstick.
In a medium bowl, use a whisk or a fork to mix together the flour, baking soda and baking powder. Set this bowl aside. Next, in a large measuring cup, whisk together the milk and sour cream . Then set this aside.
Outfit a stand mixer (recommended) with a paddle attachment. On medium setting, cream together the butter, the sugar alternative and the vanilla until fluffy (this can take up to five minutes). Turn off the mixer and scrape down the sides then add the egg whites and mix for 15 seconds on medium.
For the next step, we will add half of the dry ingredients from the first bowl along with half of the ingredients from the measuring cup to the large mixing bowl. Mix this on low for 10 seconds. Stop the mixer and scrape down the sides of the mixing bowl. Add the remaining dry ingredients and continue to mix until just incorporated (about five to 10 seconds). Do not overmix.
Bake for 25-30 minutes or until a toothpick comes out clean. Allow the cupcakes to fully cool before frosting.
I mentioned that it is important to use fresh ingredients in this recipe. Also mentioned, the sugar free pink butter cream frosting that goes with these cupcakes.
How to make cake flour from all purpose flour.
Take one cup of all purpose flour, spooned and leveled and then remove two tablespoons and set it aside. Sift together the remaining flour with two tablespoons of cornstarch twice before using. I have not tried this but, keto low carb folks can try using carbalose flour.
See post for the frosting recipe that goes with this cupcake.
