Start by making a sauce with the fruit. To do so, in a saucepan on low to medium heat, heat up one cup of the berries along with the maple syrup or alternative. Stir or whisk this consistently until it begins to resemble a jam consistency- about 10 minutes. Mash up the chunks as needed while cooking the fruit.
When you have reached the desired jam consistency, remove the saucepan from the heat and stir in the vanilla extract. Then whisk in the heavy cream.
Place the remaining ½ cup of fruit into the molds. Pour the mixture from from the saucepan into the molds and freeze. It should take about four hours for the popsicles to freeze for eating. Simply remove the popsicles from the molds and enjoy!
