Sugar Free Pumpkin Spice Whipped Coffee

Ingredients

  • 1 cup Almond Milk Unsweetened -see post for alternatives
  • 1 tbsp Instant Coffee -granules
  • 1 ½ tbsp Monk Fruit -see post for alternatives
  • 2 tbsp Boiling Water
  • ¾ tbsp Pumpkin Puree
  • ½ tsp Pumpkin Pie Spice

Instructions

  • Prepare a cup(s) or glass(s) with ice. Then add the milk to the cup or glass.

  • In a mixing bowl, whip or whisk the coffee, sugar alternative, pumpkin spice, and boiling water together (using a stand mixer or a hand mixer). This can take about three minutes in a mixer with a whisk attachment or using immersion blender. Whisk until the ingredients appear foamy and can hold some kind of structure. You may need to scrape down the sides of the bowl, as needed.

  • Gently stir in the pumpkin puree to the whipped ingredients. Then pour over the milk and ice. Stir if desired and serve. Sprinkle some extra pumpkin spice on top.
