Preheat your oven to 325 and prep your cookie sheets with parchment paper. Measure out the almond flour into a medium bowl and use a fork or whisk to give it a quick mix to fluff it up.
In a mixing bowl, beat together the sugar alternative and butter on low until creamy. Then stir in the vanilla extract and salt. Then add the almond flour.
Use a cookie scoop to scoop out each cookie, roll the cookie to form a ball, and then flatten it on to the baking sheet (leaving room for spread). Top with optional toppings as desired. Bake the cookies for 12-14 minutes or until the edges begin to turn golden brown. Allow the cookies to cool on a rack before serving.
