In a medium bowl, use a fork or a whisk to blend together the flour, baking soda, salt, and ground ginger. Set this bowl aside. Then in a mixing bowl, beat together the butter with the sugar alternatives (white and brown) until creamy. When creamy, add the vanilla extract and the eggs.
Add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Mix until just blended. The fold in the chopped pecans. Cover the mixing bowl and refrigerate for at least an hour.
When you are ready to bake, preheat the oven to 325 and prep two rimmed baking sheets for nonstick (I use parchment paper). Use a cookie scoop to scoop out the cookies and place them about two inches apart on the baking sheets. Then use the bottom of a glass or flat object to slightly flatten each cookie.
Bake for seven minutes and then rotate the baking sheets. Continue to bake for another seven to nine minutes or until the cookie edges turn lightly golden. Transfer the cookies to a cooling rack to allow them to finish setting. You can top the cookies with drizzled melted sugar free white chocolate at this time as well.
