  • Preheat your oven to 375 degrees. Prep a muffin pan for nonstick.. In a medium bowl, use a fork or whisk to blend together the oats, baking powder ,baking soda, and cinnamon. Set this bowl aside.

  • Blend together the milk, peanut butter and mashed bananas until blended. Then add the eggs, vanilla extract and sweetener and give the ingredients a few quick pulses. You can then add the dry ingredients from the first bowl and mix/processes until just blended. For the chocolate chips, you should fold these in by hand. Transfer the batter to the prepared muffin cups, filling each one about ¾ full. You can add extra chocolate chips to the tops as desired.

  • Bake for 20 minutes or until a toothpick inserted in the middle returns clean. Then transfer the muffins to a wire rack to cool.
