  • Combine together the almond flour and baking powder, giving them a quick stir with a fork to blend and break up any chunks. Stir in the coconut oil, monk fruit, vanilla extract, and the egg until just blended. Place the chocolate chunks/chip on top.

  • Microwave the cake for 60 seconds on high. If the sides of the cake seem to pull away from the mug, allow the cake to cool and then enjoy. However, if the sides do not seem to pull away simply microwave for another 10 second increments (and checking) until done.
