Sugar Free Carrot Cake Truffles

    Instructions

    • Start by finely grating the carrots. Place the grated carrots on clean paper towels or clean kitchen towel to drain while you work. Also, prepare a rimmed baking sheet with parchment paper for setting your truffles on to.
    • When the mixture is able to stick together use your hands to form 1- 1 ½" balls. Set each of the balls on to the prepared baking sheet. If you are topping the truffles with something dry such as chopped nuts or coconut, simple place the topping in a shallow bowl or on a large plate and roll the truffle ball around in it to cover. Place the truffles in the refrigerator until set (15-20 minutes)
    • Blend together the cashew butter with the monk fruit, vanilla and cinnamon. You can do this in a mixing bowl or food processor.
      In a large bowl, use a fork or whisk to mix together the coconut flour with the ground pecans. Then stir in the blended ingredients from the last step (cashew butter etc.).
    • To top the truffles with melted sugar free white chocolate, simply use a fork to dip each of the truffles into the melted chocolate and then place it back on to the baking sheet. Return the truffles to the refrigerator until set.
