Easy Grilled Lemon Garlic Shrimp

This is so easy and so tasty to enjoy at a barbecue.
Servings: 6 -8

Ingredients

  • Shrimp- 2 pounds uncooked yet cleaned and deveined.
  • Lemon Juice- ⅓ cup.
  • Lemon Zest- 2 teaspoons.
  • Garlic- 4 cloves minced.
  • Olive Oil- ⅓ cup.
  • Green Leaf Seasonings- this would include cilantro oregano, parsley etc.- ⅓ cup total (can combine or simply use one kinds as long as it adds up to ⅓ cup total).
  • Seasonings- salt pepper, hot peppers, and/or a mixture. as long as it totals 2 teaspoons. My choice for seasonings... Trader Joe's that you can buy online.

Instructions

  • We will start by making a marinade. To have additional marinade left for serving with the shrimp, simply double your marinade ingredients and then save half in a separate container for later use.
  • Clean and prep your shrimp for use. I rinse mine under cool water as I clean it. Leave the tails on for easier eating. While you clean your shrimp have your wooden skewers soaking in cold water.
  • Prepare your marinade. In a glass bowl, whisk together the lemon juice, zest, garlic, and olive oil.
  • Add the green leaf seasonings whisk and the need the remaining seasonings, whisking between additions.
  • If you have doubled your marinade for serving later, be sure to remove some now and place in a glass or similar jar in the refrigerator.
  • Pour the whisked marinade over the shrimp, saving about ¼th of it for grilling. Then cover the shrimp with plastic wrap and refrigerate for at least 30 minutes before grilling.
  • When you are ready to grill the shrimp, insert each skewer into three or four shrimp (per skewer depending on the size of your skewer). Be sure to insert the skewer from tail to head as well.
  • Discard the remaining marinade that the shrimp had been soaking in.
  • Preheat your grill to medium heat after lightly oiling the are that will be used for grilling your shrimp.
  • Place each skewer on to the grill and brush with the ¼th marinade that you had set aside earlier.
  • Cook on each side for 3-5 minutes or until shrimp turns opaque.
  • Enjoy!
