A recipe for making sugar free and vegan brownies. There are many options for available alternatives as well.
FlourAP- 1 ½ cups. See post for low carb alternative.
Sugar Alternative- equivalent to 2 cups of sugar. Granular works best.
Unsweetened Cocoa Powder- ¾ cup.
Baking Powder- 1 teaspoonI would omit this if using an egg alternative that incorporates this already.
Salt- ½ teaspoon.
Egg Alternative- see post for alternatives- equivalent to 4 eggs.
Milk Alternative- see post for alternatives- equivalent to 1 cup of milk.
Vegetable Oil or other butter alternative- Equivalent to 1 cup of oil.
Vanilla Extract- 1 teaspoon.
Sugar Free Chocolate Chips- ½ cup.
Preheat your oven to 350 and prep your pan for nonstick. I use parchment paper or foil for easy clean up.
In a large mixing bowl, mix together your flour, sugar alternative, unsweetened cocoa powder, baking powder, and salt. Set this bowl aside.
In another bowl, whisk together the egg alternative and milk alternative. Slowly add this mixture to the large mixing bowl with the dry ingredients and mix gently (do not over-mix).
Now stir in the vegetable oil and vanilla extract.
Lastly, to the mixing bowl, fold in the chocolate chips.
Pour this into your prepped pan and bake for 25-30 minutes or until the top of the brownies begins to brown or look like it is hardening. A toothpick test will probably not work for this recipe as the chocolate chips that have melted may give a false result.
Allow these to cool before cutting.
