Low Carb Blanco Pizza

A delicious blanco, or white, pizza that can be made low carb or gluten free as well.

Ingredients

  • Pizza Dough/Crust- See recipe option in the post. Optionally you could purchase a pre-made crust or prepared pizza dough.
  • Olive Oil- 2 tablespoons divided.
  • Ricotta Cheese- ½ cup has about 3.5 carbs total.
  • Shredded Cheese- Mozzarella or similar mix preferred- 1 ¼ cup.
  • Optional- toppings such as pepperoni veggies, etc.
  • Optional- seasonings as desired such as Italian seasoning pepper, etc.

Instructions

  • Prepare your crust as directed. If using pizza crust dough, as opposed to a pre-made crust itself, do not bake it until the next step.
  • Preheat your oven to 400 and make sure that your baking rack is on a low position if possible.
  • I use parchment paper to both prep and bake my pizza. Not only is it easy to clean up, it is easier to work with since you can prepare, transport, and bake your pizza on it. You can also use a pan or pizza stone with parchment paper. Cut out a piece of parchment paper in the size that meets your needs.
  • Roll out the pizza crust, leaving a bit of an edge on it for easy handling while eating. Use a pastry brush to spread out half of the olive oil over the crust. You can add seasoning over the oil if desired as well. Bake the crust for 5-8 minutes or until it begins to brown up. Then remove the crust from the oven.
  • Spread the remaining oil over the crust and then add the remaining ingredients. Add the ricotta cheese using a spoon for dollops. I like to put the veggies etc over the cheese however, it is not uncommon to add the shredded cheese over the other ingredients. Season as desired as well.
  • Return the pizza to the oven and bake for another 12-15 minutes or until done to your liking.
