An easy and delicious pasta sauce that is made with Vodka.
Servings: 6-8 servings
Onion- 1 medium chopped
Garlic- 2 cloves chopped
Extra virgin olive oil- 2 tablespoons
Plum/Roma tomatoes- 2 pounds - Chopped and peeledyes, you can cheat by using a 28 ounce can of Roma tomatoes
Vodka- 1 cup
Greek Yogurt or Heavy Cream- 1 1/2 cups
Seasonings to taste- basiloregano, pepper, salt, etc.
Over medium heat in a medium sized skillet, saute the onion and garlic in the olive oil until tender- about 4-5 minutes. The onions should turn translucent when ready.
Add the tomatoes to the skillet and cook for about 5 minutes. Stir the contents of the skillet occasionally and do not allow it to boil.
Slowly stir in the vodka and slightly turn down the heat to more of low medium. We are going to cook this for 20 minutes in more of a simmer, not allowing it to boil. However, continue to stir gently every two minutes.
Next, gently stir in the cream or yogurt and continue to cook for an additional 30 minutes. Do not allow this to boil and continue to stir as needed. You can season to taste as well while it cooks.
Serve over pasta of your choice, prepared as described on the package.
