Delicious Baked Green Tomatoes

Air fried or oven baked 'Fried' Green Tomatoes

Ingredients

  • Green Tomatoes- 4 large. Beefsteak or similar varieties work well as long as they are green and not ripe.
  • Flour alternative- 1 ½ cup Carbalose flour alternative- low carb!
  • Low Carb Bread Crumbs- ¾ cup. See post above for details.
  • Eggs- 2.
  • Milk- ½ cup.
  • Seasonings such as salt, paprika, pepper etc to taste.

Instructions

  • Oven method- prep a flat pan with a cooling rack on top for nonstick. For example, place a cooling rack sprayed with nonstick on top of the baking sheet which has parchment paper on it. If using an air fryer, simply spray nonstick or olive oil on the basket itself. Preheat an oven to 350 or air fryer to 400.
  • Slice your tomatoes to ½" and discard the ends. Place the tomato slices on a paper towel to allow them to drain a bit.
  • To make these, we will be making a dredging station. You will need two shallow bowls to do this. In the first bowl combine together the flour alternative and the bread crumbs. You can add your seasonings here or before you bake your tomatoes.
  • Now in the second bowl whip together the eggs and milk.
  • Drag the first tomato slice first through the wet ingredients and then through the dry ingredients. Season as desired and place the individual tomato slice either in the basket or on the rack. Continue to do this step until either all of your oven-baked tomato slices have been dipped or the air fryer basket is full. Since you do not want overlapping of the tomato slices, you may have to do the air frying in batches.
  • Oven bake for 45-50 minutes or until crisp, flipping the slices mid way through the baking process. Air fry the tomato slices for 10-12 minutes until crisp, flipping mid way through baking.
