Sugar Free Cocoa Chocolate Chip Skillet Cookie

A decadent triple chocolate dessert that will surly impress!

Ingredients

  • Flour- 1 cup. Can use low carb flour alternative Carbalose or a gluten free flour.
  • Sugar Alternative- ¾ cup equivalent to sugar. Granular works best in this recipe.
  • Baking Powder- 2 teaspoons.
  • Unsweetened cocoa powder- ½ cup divided.
  • Brown Sugar Alternative- ¾ cup equivalent to brown sugar. Granular works best. Here are some examples of brown sugar alternatives.
  • Vanilla Extract- 1 tablespoon
  • Butter- 1 stick .
  • Milk- 1 cup.
  • Vanilla Extract- 2 teaspoons.
  • Sugar Free Chocolate chips- 1 Cup.
  • Coffee- 1 ¼ cup brewed cold is fine.

  • You will need an oven-safe cast iron skillet for this. Also please take precautions as the skillet will be hot! I burnt my hand making this once.

Instructions

  • Preheat your oven to 325.
  • In a mixing bowl, whisk together the flour, sugar alternative, ¼ cup of cocoa powder, and baking powder. Set this aside.
  • Now, in another bowl, whisk or stir with a fork the remaining cocoa and brown sugar alternative. Set this bowl aside.
  • Heat the skillet on your stove on medium heat and add the stick of butter to the skillet. Once the butter has melted remove it from the stove and stir in the milk.
  • Slowly add the dry ingredients from the first bowl to the skillet, stirring as you go. Then stir in the vanilla extract.
  • Work the batter into the skillet, spreading it evenly. A heat-safe rubber spatula works best for this.
  • Now, drop the chocolate chips into the skillet and then sprinkle the dry ingredients from the second bowl over this without mixing the ingredients.
  • Finally, pour the coffee on top without mixing ingredients.
  • Transfer the skillet ot the oven and bake from 35-40 minutes.
  • This cake will not be fully set however, remove from oven and allow to cool a bit before serving.
