Sugar Free Chocolate Muffins

This is the tastiest recipe for Sugar Free Cocoa Muffins. This recipe can also be made gluten free or low carb as well as sugar free.

  • Preheat your oven to 375 and prep your muffin pan for nonstick. You can use nonstick or muffin liners.

  • In a mixing bowl whisk or sift together the flour and the baking soda. Then use a whisk or fork to stir in the cocoa powder. Set this bowl aside.

  • Next, in a large mixing bowl beat together the sugar alternative with the oil. Then stir in the yogurt and the milk.

  • For the next step we will add the flour and cocoa mixture from the first bowl to the large mixing bowl. Do this by adding half of the mix at a time and stirring gently between the additions. Then stir in the egg and the vanilla extract. Mix your batter until just blended- do not overmix.

  • If you are adding the optional chocolate chips you can simple fold them into the batter. Fill the muffin cup about ⅔ full., Bake this for 25-30 minutes or until done. If you are using a toothpick to test these muffins, do so where there are no chocolate chips as melted chocolate may thus give a false positive toothpick as a result. Allow these to cool in the pan.

Recipe Notes

I mentioned earlier that mentioned that overmixing your sugar free cocoa muffin batter should be avoided as it can make the texture of your muffins unappealing. Also, I mentioned that you should make sure that you are using unsweetened cocoa powder and not a chocolate milk mix or similar product.
 
You can make this recipe gluten free!
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. Make this 'keto friendly' by using a keto friendly flour.
