Homemade Beer Cheese Soup

This is a hearty and tasty soup with a great taste!

Ingredients

  • 1 Stick- Butter
  • ½ Cup- Chopped Carrots
  • 1 Teaspoon- Minced Garlic
  • ¼ Cup- Chopped Onion
  • Cup- Flour AP
  • 3 Cups- Chicken Stock
  • 1 12 ounce bottle- Beer- Ale preferred
  • 2 Cups- Milk whole preferred
  • 4 Cups- Grated Cheese- Cheddar Preferred Can Mix Cheeses
  • 2 Teaspoons- Worcester Sauce
  • 1 Teaspoons- Dijon Mustard
  • To Taste- Salt Pepper, Seasonings
  • As Needed for Toppings Chopped Scallions etc

Instructions

  • Over medium heat, add your butter, carrots, garlic and onion to a large stock pot or Dutch oven. Stir together until vegetables are soft- about six minutes.
  • Add the chicken stock, Beer and Milk to the pot.
  • Turn the heat down and simmer for 15 minutes or until thickened, whisking as needed as it cooks.
  • Remove the pot from the heat and stir in your cheese, mustard and seasonings.
  • Return to heat and allow to simmer at a medium-low heat for another 25-30 minutes, stirring as needed, until cheese is fully melted.
  • Tops with scallions etc as desired.
