Sugar Free Lady Fingers

A sugar free or low sugar method to make Lady Finger Cookies.

Ingredients

  • Baking powder- 1 teaspoon.
  • Flour AP- 1 cup.
  • Eggs- four separated.
  • Sugar alternative- ⅔ cup consider using a blend for best results.
  • Vanilla or lemon extract- 1 teaspoon.

Instructions

  • Preheat your oven to 350 and prep a baking sheet for nonstick by using parchment paper. Also, fit a large pastry bag with a ½" tip. Leave that bag in a convenient position for filling (use a glass or a cup to help prop it up).
  • Sift together the baking powder and flour and then set this aside while you work.
  • In another bowl, beat your egg whites until they begin to peak. Set this bowl aside.
  • Now using an electric mixer fitted with a whisk, mix together, on medium, the sugar alternative and egg yolks. The color will need to turn to a more of a pale yellow color- which will take 7-8 minutes. When this has become pale in color (it will also grow in size), remove the mixing bowl from the mixer.
  • By hand, stir in the egg whites, that you had set aside, into the mixing bowl and then mix in the vanilla extract.
  • Finally, using a spatula, fold the flour and baking powder mix into your bowl. Do not over-mix, the mixture should be smooth in texture.
  • Fill your pastry bag about ¾'ths of the way full and then pipe out your Lady Fingers onto the prepped pan.
  • Bake for 16-18 minutes. The outside of the cookie should be a bit firm to the touch while the middle may seem soft.
  • Allow this to cool.
