  • Preheat your oven to 350 and prep your muffin pan for nonstick.

  • In a mixing bowl, whisk together the flour, baking soda, and baking powder. Then stir in the sugar alternative that you have chosen to use

  • In a small bowl, combine together the mashed bananas, whipped egg, and the oil. Then stir in the vanilla extract.

  • Add the dry ingredients from the first bowl to the mixing bowl and gently mix. Then stir in the egg.This is one of those recipes where we do not want to over mix the ingredients when we combine together the dry ingredients with the wet ingredients. Gently stir in the wet ingredients (bananas et al) with the dry ingredients in the mixing bowl until just mixed.

  • Bake your banana muffins for 20-25 minutes or until a toothpick comes out clean.

However, gluten free diet people are encouraged to use a gluten free all purpose flour such as one of these. While bananas do have carbohydrates in them, low carb diet people can use a low carb flour to keep the carbs down in their muffins. If you are using Carbquik, please omit the baking powder and baking soda from the ingredient list below.
