Preheat your oven to 325. Prep your cookie sheet for nonstick
In a large bowl, mix together your flour, baking soda, baking powder, pumpkin pie spice. Set this bowl aside
Now in a mixing bowl, beat together the sugar alternative and the butter
Add the vanilla, pumpkin, and egg to the mixing bowl and continue mixing.
Lastly, add to the mixing bowl, about a half at a time, the flour mixture from your first step
Bake for 18-20 minutes or until these appear to become firm. Remove from oven and allow to sit on the pan for a few minutes before transferring to a rack
