Low Carb Mac and Cheese Made with Beer

Yes! It is possible to make low carb macaroni and cheese. This delicious recipe is for low carb mac and cheese made with beer! Gluten free options too!

  •  Preheat your oven to 350 and prep a large baking dish for nonstick.  Place your prepared pasta into a large mixing bowl and set this aside.

  • In a sauce pan over low-medium heat, melt you butter, Once the butter has melted you can whisk in the flour alternative. The you can whisk in the beer and milk, whisking continuously. Do not burn this and take care to scrape the sides and bottom of the sauce pan. This should thicken in a few minutes.

  • Once the sauce has thickened, remove it from the heat and stir in the shredded cheese. You can add your seasonings here as well. Then stir this mixture into the pasta from the large mixing bowl.

  • Transfer the mix to your prepared baking dish. Bake this for 35-40 minutes or until it begins to bubble. Allow this to cool before serving and top with the Parmesan Cheese.

As mentioned, You will need to get low carb elbow pasta- which you can find here.
There are also gluten free options for elbow pasta. You will also need beer. I recommend something with a bit of flavor such as an amber beer.
Flour Alternative- ¼ cup. Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour
