Sugar Free Candy Cane Bark

  • Prep a sheet or cookie pan with parchment paper.

  • If you have not done so, crush your candy. The easiest way to do this is to place the candy in a zip top style bag. Wrap the bag loosely with a kitchen towel. Then use a hammer to crush the candy. You can then manually finish any large chunks manually with a large butcher knife if needed.

  • Using a double boiler, or microwave safe cup or bowl and a microwave, melt your chocolate. If using a microwave, I like to cook for 30 seconds, stir, and repeat as needed until melted. The stove method should be stirred continually as well

  • When the chocolate has melted you can stir in your remaining ingredients.Transfer the mixture to the prepared sheet and refrigerate until hard- about an hour. Remove from the refrigerator and break the bark into pieces.

If you cannot find sugar free candy canes, you can use these sugar free starlight candies instead. Also, let us give this a peppermint taste with some peppermint extract such as one of these.
