How to Make Low Carb Sugar Free Pancakes

  • Pre-treat your skillet or pan for nonstick. A baking spray works great. Preheat that pan for medium- medium high heat.

  • Meanwhile, in a mixing bowl, combine together the Carbquik and the sugar alternative.

  • In another bowl, mix together the half and half, heavy cream, melted butter, and vanilla extract.

  • Slowly add the wet ingredients from the second bowl to the first bowl. I do this by adding half of the wet ingredients, stirring a bit, and then I add the remaining wet ingredients. Then stir in the beaten eggs.

  • Cook these pancakes like you would cook regular pancakes. Ladle or spoon the batter on to the preheated skillet or pan. When the batter begins to bubble, simply flip the pancake over and cook until done

As mentioned, this recipe calls for Carbquik. It is a low carb baking mix that I use often in my recipes.
You can take these pancakes to the next level by adding a cup of sugar free chocolate chips such as these. Top you pancakes with a low carb syrup such as this one carb syrup option or one of these sugar free and low carb syrups.
