One Minute Sugar Free Chocolate Chip Cookie

  • Prep your mug for nonstick if desired, Then whip together the butter and sugar alternative in the bottom of the mug. Next add the egg yolk and cream the ingredients together.

  • Stir in the remaining ingredients- adding a few chocolate chips to the top before you are ready to microwave.

  • Microwave on high for 35-40 seconds or until done, checking on it every 10 seconds (I like to rotate the mug when I check on it),

  • To slice the cake, gently pry the sides of the cookie away from the sides of the mug and tip over on to a flat surface to slice. Make a regular cookie by microwaving the cookie batter on a small piece of parchment paper instead of in the mug. Be sure to shape the cookie before you microwave it and monitor the cooking time as this may need to be adjusted.

While this recipe calls for making it in a microwave-safe mug, you can either eat it directly out of the mug or, transfer it to a board and slice into a normal cookie shape.
Make a regular cookie by microwaving the cookie batter on a small piece of parchment paper instead of in the mug. Be sure to shape the cookie before you microwave it and monitor the cooking time as this may need to be adjusted.
We will be using almond flour instead of regular wheat flour. Here are some other low carb flour choices that are available to use instead.

In addition to the sugar free chocolate chips, you will need a brown sugar alternative. Surkin Gold is one example of a brown sugar alternative.
Also, a milk product of your choice. Unsweetened nut milks, such as Almond Milk or Cashew Milk, work find for this recipe too.
