Please be sure that your cauliflower is properly prepped as described in the post.
Preheat your oven to 400 and prep your baking sheet with parchment paper.
Next, place your drained and prepared cauliflower in a mixing bowl. In a smaller bowl, whisk together the eggs and your chosen seasonings. Gradually add this to the cauliflower bowl, half at a time, stirring between the addition.
When you are able to work this into shapes, roll out portions into a ball and then flatten that ball into a circle onto your prepped baking sheet. Your flattened balls should be about 3", yielding you between six and seven flattened tortillas total.
Bake the tortillas for ten minutes and then flip them over. Continue baking for an additional seven to eight minutes or until they seem set.

To use these tortillas later or to brown them, simply heat for a minute or so on each side in a skillet over medium heat.
