Homemade Cauliflower Tortilla Wraps

  • Please be sure that your cauliflower is properly prepped as described in the post.

  • Preheat your oven to 400 and prep your baking sheet with parchment paper.

  • Next, place your drained and prepared cauliflower in a mixing bowl. In a smaller bowl, whisk together the eggs and your chosen seasonings. Gradually add this to the cauliflower bowl, half at a time, stirring between the addition.

  • When you are able to work this into shapes, roll out portions into a ball and then flatten that ball into a circle onto your prepped baking sheet. Your flattened balls should be about 3", yielding you between six and seven flattened tortillas total.

  • Bake the tortillas for ten minutes and then flip them over. Continue baking for an additional seven to eight minutes or until they seem set.
