How to Make an Amazing Shakshouka

This is the the recipe for How to Make an Amazing Shakshouka ('poached' eggs over tomatoes)  that will both impress and fill you and your friends when you serve it.

  • Start my heating your oil in your cast iron skillet on medium heat. When it appears to be warm throughout (after a couple of minutes) add the onions and garlic, We will saute these until soft- five to eight minutes. The onions will be translucent then ready.

  •  Meanwhile, in a preferably glass bowl, combine together the peppers (including optional hot ones), seasonings and chopped tomatoes. Stir the contents from the bowl into the warm skillet Once combined, allow this to simmer until most of the juice from the tomatoes has burned off.   This can take up to 12 minutes. Be sure to not cover the skillet for best results.

  • Next, we will add the eggs. This works best if you make an indentation or crater in the skillet mix for each egg to be placed into. The indentations should be evenly spaced throughout the skillet.
  •  Crack each egg into each of the indentation that you have made. Then cover the skillet and bump down the heat a bit to allow the eggs to cook. The eggs should be set or somewhat firm before serving . It will take about five to six minutes for this to happen.

  • Top as desired with additional seasonings such as cilantro or parsley.
