Sugar Free Strawberry Muffins

  • Preheat your oven to 350 and prep your muffin pans for nonstick.

  • In a large bowl, sift together your flour, baking powder, baking soda, and cinnamon. Make a well in the center of these ingredients and then set this bowl aside for a moment.

  • Combine together the milk, eggs, and melted butter. When mixed, pour these wet ingredients into that well you created in your dry ingredients in the first bowl. Then, stir the ingredients together until just mixed together- not over mixed. It is 'okay to have lumps'in your batter.

  • Next gently stir in the sugar alternative. Then fold in the strawberries (I prefer to fold them into the batter rather than stirring them in in order to keep the strawberries intact).

  • Bake for 23-28 minutes or until a toothpick comes out clean.

As mentioned, you can make these muffins gluten free or lower in carbohydrates.
This recipe calls for all purpose flour.
Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
 
Also, as indicated above, you can make these Sugar Free Strawberry Muffins Vegan .
Instead of adding the milk to your batter, simply add a nut milk such as Almond Milk.Instead of adding the eggs, use ¾ of a cup of canola oil.
