Sugar Free Copycat "Twinkie" Cakes

Instructions

  • Start by preheating your oven to 300 and prepping your baking pan for nonstick
    Preheat Oven Bake
  • Make the sugar free sponge cake batter according to the directions and using the 'eclair' style molds to bake them in.  Bake this for 30-35 minutes or until a toothpick comes out clean. Allow this to cool before add the cream.
  • For the cream, blend together the sugar free marshmallow fluff, powdered sugar, margarine/butter, vanilla extract and warm water. Beat this until fluffy. If this seems thick, you can add additional milk or water until you get the right consistency for this. Do not exceed 2 tablespoons in total
    mixer whipped cream
  • To inject your cakes, you will need to make three to four holes in the bottom of the cakes and then inject the marshmallow fluff cream. You may need to dig out a bit of the cake with a chopstick or similar item. Alternatively, you could just 'frost' the top of the cakes with the fluff cream.

Also, you will need Sugar Free Powdered Sugar which you can find the recipe for here. But, if you do not want to make it, you can buy sugar free powdered sugar online.
