This delicious recipe for Sugar Free Homemade Zucchini Bread is sure to be a favorite.There are low carb and gluten free options to make this as well as sugar free.
Preheat your oven to 325 and prep your loaf pan(s) for nonstick.
In a medium sized bowl, whisk together your flour, baking soda, nutmeg, and cinnamon. Set this bowl aside.
Now in a mixing bowl blend together your sugar alternative and oil. The add the beaten eggs and vanilla extract.
For the next step, we will add the flour mixture to the mixing bowl with the other ingredients. Do so by adding half of the flour mixture at a time, gently mixing between additions. Do not over-mix.Then you can fold in the grated zucchini and optional chopped nuts/raisins.
Bake your bread in the center of your oven for 45-50 minutes or until a toothpick comes out clean. Allow it to cool for a few minutes before removing from the pan. Baking time can vary depending on how many loaf pans you are using and how thick your bread is

As mentioned, since this is a sugar free recipe, I am posting all purpose flour to be used.However, gluten free diet people are encouraged to use a gluten free all purpose flour such as one of these. Also, low carb diet people can use a low carb flour to keep the carbs down in their bread. To grate your zucchini, do not peel it first.
Zucchini is meant to add to the taste and texture of bread by 'melting' inside of the bread while it bakes.
However, it will be easier to grate the zucchini if it is refrigerated a few days ahead of time and grated just out of the refrigerator.Nutritional data may vary depending on ingredients added.See post for details.
