  • like to prep my fryer basket with a bit of nonstick spray before I begin. Preheat your air fryer to 400.

  • To prepare your eggplant slices, simply brush them with the olive oil and allow the olive oil to absorb in while your air fryer heats up. Place as many slices that can fit at a time into your fryer basket without overlapping them. Air fry the first side of the eggplant for 10 minutes and then then flip over and cook for another three minutes.

  • Use a tablespoon to place the sauce on top of the eggplant slices and add your cheese and toppings. Continue to air fry the eggplants for another two to three minutes or until the cheese has melted or the eggplant has begun to brown.The air frying time of your eggplant pizza can vary especially depending on the kind of air fryer that you are using adn the width that you have cut your eggplant into. Please keep and eye on your pizzas white they bake.

Recipe Notes

As mentioned, for the sauce in this recipe you can use marinara sauce, pizza sauce, pasta sauce, or simple tomato sauce.
Being that this is a pizza, you will also need cheese for this recipe.
Shredded mozzarella is my first choice of cheese, mostly because I have a lot of it around as I use it often. Other great cheeses that you could use include grated Parmesan cheese, Provolone (usually in slices),, are any great tasting Italian blend of cheeses.
