Sugar Free Ginger Snap Cookies

These delicious and festive Sugar Free Ginger Snap Cookies can be made low in carbs, keto friendly or even gluten free if desired.

  • Preheat your oven to 325 and prep a cookie sheet for nonstick. I use parchment paper

  • In a medium bowl, sift together the flour, cinnamon, ginger, and baking soda. Set this bowl aside.

  • Next, cream together the sugar alternative in a large mixing bowl. Once it is creamed, you can beat in the molasses and the egg.

  • For the next step, we are going to add the contents from the first bowl with the dry ingredients (flour etc) to the large mixing bowl. Do this by adding half of the dry ingredients, mix gently and then add the remaining ingredients.

  • Roll the cookies into balls and place onto the cookie sheet, far enough apart to allow from spreading as they bake. You can roll the cookies in additional granular sugar alternative if desired prior to placing onto the cookie sheet. Bake the cookies for 10-12 minutes or until they begin to 'crack'.

Recipe Notes

As mentioned, this recipe calls for a quarter cup of dark molasses.
One alternative to this can be to mix together three tablespoons of granular sugar alternative (one that measures 1:1 with sugar in volume) with a tablespoon of water. You can try using a brown granular sugar alternative (one that measures 1:1 with sugar in volume) as well.
Another idea, is to try Organic Yacon Syrup.
Yacon Syrup is very similar to molasses when used in recipes. It is a natural sweetener that comes from tuberous roots of the yacon plant.
