Sugar Free Almond Cookies

This delicious tasting recipe for Sugar Free Almond Cookies is gluten free, sugar free, low in carbs and with vegan options.

  • Preheat your oven to 325 and prep your cookie sheets with parchment paper.

  • In a mixing bowl, cream together the butter and the sugar free powdered sugar. Then stir in the almond flour and and the two extracts. Lastly, fold in the chopped almonds.

  • Use a scoop to scoop out the cookie dough and then form the dough into a ball, flattening each ball onto the prepared cookie sheet 2" apart. Bake for 10-12 minutes or until they begin to turn golden. Allow the cookies to cool on the cookie sheet.

Recipe Notes

I mentioned that you will need sugar free powdered sugar in order to make this recipe, You can buy sugar free powdered sugar online or you can refer to my recipe for how to make sugar free powdered sugar.
Also, as you may suspect, you will need almond flour.
While you can easily buy your own already made Blanched Almond Flour, making your own is also an option. To make your own almond flour, I suggest using a food processor and adding a quarter cup of almonds at a time and continue to process until you have reached your goal of one cup. This will most likely be just under a cup of almonds to reach your goal.
