  • Preheat your oven to 375.Prep your cookie sheets with Parchment Paper .

  • In a small bowl, whisk together the flour and the baking powder. Set this bowl aside.

  • Next, in a mixing bowl, cream together the butter and the sugar alternative.

  • For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions. The stir in the egg and the vanilla extract. If you have chosen to double this recipe in order to make two batches, you can divide the dough in half now, placing one half in a new bowl.

  • Stir in the gelatin until it is just mixed in.You can wrap your dough in plastic and place in the refrigerator if desired at this time.

  • To bake as is, use a scoop or tablespoon to scoop out dough and then roll it into a ball. Place the ball on to the cookie sheet and then flatten (some folks use a cup or glass to flatten their cookies.) Sprinkle with additional granulated sugar and bake for 10-12 minutes or until the begin to turn golden around the edges. Allow the cookies to sit on the cookie sheet for a few minutes before transferring to a rack for cooling.

Recipe Notes

As mentioned earlier, make sure that your chosen gelatin is not sweetened with aspartame. This is because aspartame does not bake well due to its chemical composition.
When choosing a sugar free gelatin product, please read the label for best results.
You can find sugar free gelatin online that has been sweetened with Splenda.
I also found a gelatin that has been sweetened with Stevia which may work for you as well.
If you intend to make your cookies at another time or roll your cookies and use cookie cutters to make shapes, you can preheat your oven before you actually intend to bake your cookies. Also you can double the batch to divide it up just before adding the gelatin to get more than on color cookie.
