Sugar Free and Baked and Chicken Teriyaki

This delicious and easy to make Sugar Free and Baked and Chicken Teriyaki can be made low in carbohydrates and keto as well.

Tip: Allow the chicken to marinate in the teriyaki sauce, covered, and in the refrigerator before baking.

Instructions

  • Start this recipe by making the sauce. In a medium bowl, whisk together the sugar alternative, corn starch, ginger, and water. Then add the soy sauce, vinegar and garlic and whisk.

  • Next, heat a saucepan on low-medium heat and transfer the ingredients from the medium bowl to the saucepan. Continue to whisk the ingredients until it begins to bubble.Turn the heat off and allow the mixture to cool, whisking as needed to avoid thickening etc. You can add additional water to thin out the sauce or seasonings to adjust the taste.

  • Preheat you oven to 400 and prep your glass baking dish as desired for nonstick. Place the chicken on to the baking dish and then cover with the sauce, making sure that the chicken pieces get well covered. Tip: You can alternatively place the covered chicken into the refrigerator to marinate for up to overnight before baking. Using a zip top bag is another way to marinate your chicken. Be sure to cover it well if you choose to do this.

  • Loosely cover the baking chicken with aluminum foil to help it retain moisture and make it easier for you to occasionally stir the chicken while it bakes. Bake for 35-40 minutes or until the chicken is no longer pink.

Recipe Notes

Instead of regular sugar, you can use a sugar alternative that can be measured to eqaul ⅓ cup of regular sugar. However, a natural sugar alternative then you could use four tablespoons of honey or agave.
 
Also, to bake this, use a regular glass baking dish.
I like to prepare my baking dish with a quick spray of nonstick spray. Also, I loosely cover the baking chicken with aluminum foil to help the chicken hold on to moisture.
