Sugar Free Ice Cream Cone Cupcakes

Ingredients

  • 1 Sugar Free Cake Mix - plus ingredients needed to prepare it.
  • 25 Cones -use cones that have no added sugar
  • Frosting
  • Optional Toppings
Tip: Use liners in your pan for an easy clean up.

Instructions

  • Preheat to 325. Place a cupcake liner in each cup of the cupcake pan. Make the cupcake batter as instructed on the cake box. Then pour the batter into each of the prepared muffin cups. Each cup should be about ½ to ¾ full.

  • In each of the muffin cups, place an empty cone upside down. Bake for 18- 20 minutes or until a toothpick comes out clean. Allow the cupcakes to cool completely. When cool, remove the cupcake liner from each of the cupcakes and frost.

I mentioned that you can top your cupcake cones with one of my sugar free frosting recipes that you can try or you can use sugar free frosting already made. Also, there are sugar free sprinkles that you can put on top to make your cupcakes look even more fun!
Also mentioned, poking a small hole in the bottom of each cone can help allow steam to release.
Keep in mind that cones naturally seem to go soft quickly when not covered. For best results, and to keep your cone crisp after baking, serve your cupcakes as soon as possible after frosting. Or, consider freezing your cupcakes until about six hours before you are ready to serve them and allow to defrost.
