Sugar Free Double Chocolate Espresso Cookies

  • Preheat your oven to 325 and line a baking sheet with parchment paper.

  • In a medium bowl, whisk together the flour, baking powder, baking soda,unsweetened cocoa powder and espresso. Set this bowl aside while you continue.

  • In a mixing bowl, cream together your butter with your sugar alternative. Then add the eggs and the vanilla and beat until somewhat fluffy.

  • For the next step, we will add the dry ingredients from the first bowl to the mixing bowl. Do this by adding half of the dry ingredients at a time, stirring between additions taking care to not over mix your cookie dough. Then, fold in your chocolate chips.

  • Bake your cookies for 10-12 minutes or until they appear to be set. Cool your cookies on a wire rack.

Recipe Notes

I mentioned that you will need unsweetened cocoa powder for this recipe. You will also need sugar free chocolate chips for this recipe.
Using instant espresso powder will make this an easier to make recipe rather than if you were to use espresso beans.
You can find instant espresso powder here. Also, I mentioned that for best results, use fresh ingredients in this cookie recipe.
Also, I like to sprinkle Kosher salt on these cookies for a bit of color and balance of flavor.
