No Bake Sugar Free Vegan Chocolate Cake

Ingredients

  • 12 ounces Tofu -firm and silken
  • 1 ½ cups Sugar Free Chocolate Chips -vegan
  • ½ cup Almond Milk - no sugar added, see post for alternatives
  • ½ cup Sugar Free Almond Butter -see post for alternatives
  • Crust and Ganache -see post for details.

Instructions

  • Prepare the crust as indicated in the recipe (vegan or sugar free)

  • In a double boiler or the microwave, melt the chocolate chips. To microwave, simply use a microwave safe mixing or similar bowl to melts, stopping to stir every 30 seconds. Allow this to cool for while you start the next step.

  • Use a blender, immersion blender, or food processor to blend the milk and the nut butter. Then add the melted chocolate and blend until smooth. Transfer this to the prepared crust and refrigerate for two hours before topping with the ganache.

  • Refrigerate until firm before serving (at least an hour).

Feel free to use your own crust if desired.

To make this recipe as a pie use round pie dish . To make this more like a cake use a springform pan.
