  • In a medium mixing bowl, blend together the peanut butter and the syrup.

  • Next, in a large mixing bowl, mix together the almond flour, flaxseed, and a quarter cup of the coconut.

  • Add the peanut butter and syrup mixture from the first bowl to the larger mixing bowl Stir in the vanilla extract and blend the ingredients until they are well mixed. Refrigerate for 10-15 minutes to allow the ingredients to get hard enough to work with. You can skip this step if desired.

  • Roll the mixture into individual balls, roll in the remaining coconut, and then place on a rimmed pan. Refrigerate until firm, about 20 minutes.

Feel free to use another sugar free nut butter such as this recipe for homemade sugar free almond butter.
You can find sugar free keto peanut butter online as well.
 
Also mentioned was that almond flour is used in this recipe.
The almond flour recipe as the flour adds structure and is low in carbs. However, if you are not so interested in this being a low in carb recipe, you could easily use rolled oats instead.
