Sugar Free Pecan Pie Muffins

  • Preheat your oven to 325 and double prep your muffin pan for nonstick

  • In a large mixing bowl, use a whisk to mix together the flour and the brown sugar alternative. Next, in another bowl, whisk together the butter, vanilla extract, and the eggs

  • Add the wet ingredients from the second bowl to the dry ingredients in the first bowl. I like to add half at a time and gently stir between additions. Stir these ingredients until just combined- lumps are not a big deal in these muffins. Fold in half of the chopped pecans. The top each of the muffins with the remaining pecans before baking.

  • Bake for 25-28 minutes or until a toothpick comes out clean from the center. Remove the muffins from the muffin pan and allow them to cool before serving

Recipe Notes

I mentioned that you should use a brown sugar alternative that is granular for best results. That sugar alternative should also measure 1:1 with regular brown sugar.
Also, I recommend using a double prep method for your muffins.
These muffins tend to stick. As a result, my suggestion is to use two methods of prep. For example, using both nonstick spray and a light dusting of flour to prevent sticking.
